With the exception of the first three games, each game is entirely independent from the others. Most of them contain references to other games in the series, but there's no overarching plot that you'll miss out on by playing them out of order. So yeah, play them in any order you like.
Mario Galaxy is ten years old, and now I feel old.
Don't be put off if you see Dragon Quest IV-VI referred to as the Zenithia trilogy. They share a few references, but the stories themselves aren't related at all.
